Pistachios: 

Pistachio is the seed of a small tree named pistachio that its origin is MiddleEast and central Asia and it grows in Iran, Afghanistan, Syria and Turkmenistan.

Pistachio is a persian word which has been entered to Latin language.

Iran's pistachio is the best and is highly famous for its high quality and high in demand varieties. Iranian pistachios have a world-famous taste that is unrivaled because of its natural oil.

The quality of Iranian pistachios is because of several regional and biological factors such as suitable climate, average cold and rainy winters, sunny springs and summer dayes.

Pistachios are one of the few nuts typically sold with their shells attatched; unlike other nuts, pistachios split naturally as they grow. 

Pistachios are usually green and they taste sweet; kernel of pistachios are found in different colors ranging from yellow to geen.They are categorized in different types according to their size; they are divided into 3 types: long, round and jumbo. long pistachio are also divided to 3 categories:long, semi-long and super long. long size (the number of pistachio in 28/3 gram=once) is 22-24, 24-26, 26-28, 28-30 and 30-32. semi-long is 28-30, 30-32 and 32-34; And super long is 18-20, 20-22, 22-24, 24-26 and 26-28.

Round pistachio is 26-28, 28-30, 30-32 and 32-34.

Jumbo pistachio is 18-20, 20-22, 22-24 and 24-26.

Long type pistachios are Akbari, Ahmad Aghaei and Badami; Akbari stands in super long category, Ahmad Aghaei stands in long category and Badami stands in semi-long category.

Kalle Ghoochi pistachio stands in Jumbo category and  Fandoghi stands in Round category.

Pistachio kernel is the edible part of the pistachio and is obtained after the shelling process; These kernels are rich in fat and other valuable nutrients. They are usually used as a tasty ingredient in bakeries, confectioneries, etc...
